The Tchep with Fish
The Tchep, also known as "Thieboudienne" or "Ceebu jën". It's the heart and soul of Senegalese cooking.
Here’s how you can make it:
Start with the Fish: First things first, give the fish a good clean and slice it up. Then, rub it down with a tasty mix of garlic, parsley, onions, and whatever spices you love most. Once that's done, fry the fish until it’s golden and crispy, just the way it should be.
Next, the Sauce: Grab a pan and sauté some onions in oil until they’re nice and soft. Toss in some tomato paste, diced tomatoes, a couple of bay leaves, and a bouillon cube for extra flavor. Let it all simmer together for about 10 minutes, then add a bit of water to thin the sauce out to your liking.
Prep the Vegetables: Now, drop in the carrots, sweet potatoes, cabbage, eggplant, and cassava into the sauce. Cook them until they’re tender and cooked through. Once done, carefully take them out and set them aside for later.
Cook the Rice: Time for the rice! Add the rinsed rice to the pot, then pour the sauce over it. Cover the pot and let the rice cook slowly, soaking up all that delicious flavor.
Bring It All Together: Finally, gently mix the vegetables back into the pot, placing the fried fish on top. Let it sit for a few minutes to let all those wonderful flavors come together. Serve it up on a big platter, perfect for sharing.
